Kombucha is made by fermenting sweetened tea with a SCOBY (Symbiotic Culture of Bacteria and Yeast). The SCOBY consumes the sugar in the tea, creating organic acids and natural carbonation.
A common misconception is that consumption of these microorganisms changes your gut flora, however there is insufficient evidence supporting this claim. One thing we’re sure of is that during fermentation, beneficial acids such as acetic and gluconic acids are produced, which are known to support a healthy gut microbiome.

You can store Umami Brew bottles at a cool room temperature—no refrigeration needed—preferably in a clean, dry, and dark place. Thanks to nearly four years of R&D, we’ve naturally achieved a shelf life of up to 12 months without pasteurization.
